Ricotta is a cheese made from the leftover whey that comes from the production of other cheeses from the milks of sheep, cow, goat, or water buffalo. Ricotta is made by coagulating the proteins that remain by heating the whey almost to boiling – Ricotta literally translates as “re-cooked” in Italian!
L Dairy’s Ricotta is a favorite component of many desserts such as cheesecakes, cannoli and a wide variety of different cookies as it can be beaten smooth and mixed with other ingredients like sugar, cinnamon, orange zest, strawberries, or chocolate shavings. Our Ricotta is also commonly used in savory dishes, including pasta, pizza, lasagna, and ravioli and can also be used as a substitute for paneer in the Indian dessert known as ras malai.
